OOLONG TEA
In Fujian, oolong tea established its own culture. Our selection is from Fenghuang, Fujian. The special kind is given the name Dancong, which means single branch.
Oolong tea is a kind of partially fermented tea and is known for its large varieties of flavours. Due to different production processes, it offers interesting perceptions such as the fragrant of orchid, honey, osmanthus, walnut, and charcoal.
In Chinese traditional medicine, Oolong tea is neutral in its medical quality. It doesn’t impact one’s body with too much ‘ice’ or ‘fire’ energy. This is why it is widely beloved and can be enjoyed in every time of the year.
There are four main areas that produce Oolong tea.
Southern Fujian oolong tea is mainly produced in Anxi, Yongchun, Nan'an, Tong'an and other places in southern Fujian. Anxi Tieguanyin (iron buddha), which is popular in the north and south of the river, is the representative of southern Fujian Oolong. In addition to Tieguanyin, there are golden laurel, Yongchun bergamot, southern Fujian narcissus and other varieties.
Northern Fujian oolong is mainly produced in northern Fujian, including Wuyishan, Jianou, Jianyang, Shuiji and other places. There are mainly two types of Wuyi rock tea and northern Fujian narcissus, of which Wuyi Mountain rock tea is the most famous.
Taiwanese oolong tea mainly includes Wenshan Baozhong, Dongding(frozen mountain) Oolong and Hong(red) Oolong. Taiwan is a special production area. Due to its unique geographical and climate conditions, it is suitable for the growth of various tea trees. Tea is produced all over Taiwan, among which Dongding Oolong tea and Wenshan Baozhong tea are the most representative.
Guangdong oolong tea is mainly produced in eastern Guangdong, Chao'an, Raoping, Chenghai, Dapu, Meizhou, Dongguan and other places. Famous for Dancong, the most famous is Phoenix Dancong, in addition to Lingtou Dancong, Shiguping Dancong, and Tiepu Dancong.
Fenghuang Dancong refers to a high-quality tea that is selected from the Phoenix Narcissus species on the Phoenix Mountains, selected from the excellent single plant, cultivated by a single plant, and then picked and made from a single plant.

HOW TO BREW OOLONG TEA:
AMOUNT:
In a 200ml tea pot, use 4-6g of tea leaves
Oolong tea is brewed with boiling water. Water quality, water temperature, amount of tea set, and brewing time are all important factors that affect the brewing of oolong tea. In addition to spiral water injection method, you can also use fixed-point water injection, do not directly flush the water on the tea leaves to avoid bitterness. Wash the tea with boiled water and imemdiately pour out and digard. The brewing point of long-leaf tea is to brew it quickly, while the time of granule can be longer. After the tea leaves are stretched, the speed of brewing will be accelerated. After five brews, the time should be extended for 10s.
0: wash the tea with 100’C water and pour out immediately
1-4: 100’C water, 0 second
5-?: increase the time for 10 seconds each time

凤凰单枞:鸭屎香
Phoenix Dan Cong: DUCK SHIT

The funny name of this kind of Dancong oolong tea came from the shape of the tree stems. The upper part of the roots are exposed from the soil, and often looks twisted and dark, which resembles the look of duck feet. And when the roasted leaf came out black and long, people assoiciated it with the faeces of duck.
Smelling it is like picking a piece of dried rock in the mountain, feeling its warmth from the heat of the sunlight. Scratching the surface of the rock and some particles sneak into your nostril.

Rock Tea: Da Hong Pao

In 1385, the 18th year of Hongwu in the Ming Dynasty, Ding Xian, a candidate, went to Beijing for the imperial examination. When he passed Wuyi Mountain, he suddenly fell ill and had unbearable abdominal pain. He happened to meet a monk from Yongle Zen Temple in Tianxin. The monk took out the tea leaves from his collection and brewed them for him to drink, and the pain stopped. After he passed the imperial examination, he came to thank the monk and asked about the origin of the tea. After learning about it, he took off his Dahongpao and walked around the tea bushes three times, and draped it on the tea tree, so it was named "Dahongpao". The champion took the Dahongpao in a tin can and brought it back to the capital.After the champion returned to the court, the queen happened to be ill and no doctor could cure her. He took out the can of tea and presented it to the queen. After drinking it, the queen gradually recovered. The emperor was very happy and gave her a red robe. He ordered the champion to go to Jiulongke (pronounced kē) in person and drape it on the tea tree to show his grace. At the same time, he sent people to guard it and all the tea leaves must be collected and tributed, and no one could hide it privately. From then on, Wuyi rock tea Da Hong Pao became a tribute tea exclusively for the royal family, and its fame spread throughout the world. It is said that every year officials sent by the imperial court wore Da Hong Pao and hung their robes on the tribute tea tree, hence the name Da Hong Pao.

The dried leaves twist like dark braids, glossy and ink-black beneath a delicate frosted sheen. To the touch, they are firm, dry, quietly powerful.
